This is a complicated and fascinating profession that requires much dedication.

More than a profession, it is a lifestyle, since we are in close contact with nature and its annual cycles. For example, the phases of the moon must be taken into account while working the land, as well as many other factors which can influence the quality of the grapes.

In the area of Caniles, where we are located, all the elements come together perfectly: the setting, the climate, the soil, the altitude and the varieties of grapes we have selected.

It is both a privilege and a challenge to cultivate the vineyards and make wine in these conditions.

We also have a clear goal: making quality wines.


Since I was young I always liked everything that was related to wine.

The grapevines, those plants with dry and twisted trunks that seem to be dead in winter and then reappear in spring, growing and forming a spectacular vegetation.

I am from Ripoll, a town located in the Catalan Pyrenees, where there are no vineyards nor wineries, but I was always interested in this subject.

In 1984 I traveled to the counties of Penedés and Priorat. I visited wineries and cooperatives and tried those powerful 15º and 16º wines before the county of Priorat became the benchmark it is nowadays.

My father-in-law was a viticulturist in Caniles, a village located in the north of the province of Granada. With him I learnt the way of understanding viticulture from a cultural perspective of a hundred years.

I became more and more curious and started realizing how complicated the winemaking process is.

I had to study about it. I did it at the INCAVI (Institut Català de la Vinya i el Vi) and I read a lot about wine, wineries, viticulture, winemaking...


La aventura Bodegas Vilaplana paraje del Mincal, Caniles, Granada In 1995 we began experimenting and we planted four varieties (Cavernet-Sauvignon, Tempranillo, Macabeo and Chardonnay) to test how they adapted to the area and the quality they could offer.

The potential and numerous nuances of the Tempranillo variety stood out, as well as the aroma and taste of the Macabeo grapes.

We analyzed the different lands, the weather and the rainfall, and we confirmed it was an exceptional place to cultivate vines.

During the first years of cultivation, while the grapevines took root and grew, we designed and built our winery, small but equipped to produce quality wines.


CANILES is a village located at the foot of Sierra de Baza, in the high plateau that borders to the north with Sierra del Segura and to the south-east with the valleys that lead to the Mediterranean Sea.

Almond trees, olive trees and cherry trees are grown here. In the meadow, green beans, tomatoes, zucchinis and eggplants are cultivated.

The Sierra de Baza Natural Park is a beautiful place as well as rich in flora(pines, bushes, brooms, aromatic plants...) and in fauna (wild goats, deers, foxes, wild boars, eagles, hares...). Its highest peak is Santa Barbara and it is 2271 meters high.


We have 5 hectares of vineyards distributed in two areas.

The vineyard "Pago Parrax" is planted with the Tempranillo variety. It is an area of 3 hectares and it is located in Sierra de Baza, 1000 meters high, at the entrance of the Natural Park.

As I said before, we planted the Tempranillo variety because of its great potential of aromas and tastes that it produces in our area, which is due to several reasons:

  • Location and climate. The area where we are at is characterized by the great temperature inversion between day and night, either in summer or in winter.
  • Soils. The soils are loamy, stony, clayey and calcareous.
  • Conduction in high trellis in order to spread out the foliar mass as much as possible, outdoor and with the right sun exposure.
  • Cultivation of the vineyard. We do it as my father-in-law taught us and as he was taught, being very respectful to the environment. Fortunately, our vines are healthy due to the altitude and climate.
  • Production control. We do leaf pruning and cluster thinning when needed so that each grapevine has a balanced production to obtain the highest quality.

Un sueño Bodegas Vilaplana paraje del Mincal, Caniles, Granada White grape vineyards are located in Paraje del Mincal, on the other side of the slope and at a lower altitude.

Soils are sandier and looser, very appropriate for Macabeo grapes and for the authoctonous grapes from Jaen (Andalusia, Spain).

The conduction system, cultivation and controls are the same that we use for red grapes.


The winery is located in Paraje del Mincal, in the outskirts of Caniles.

It is built in three levels in order to make the best use of gravity in the transfers for pumping as least as possible, to clearly differentiate each area of the winery, and to achieve temperature and humidity stability naturally.

We are equipped with the latest technology available in the sector, always appropriate for a small winery.

When grapes get in the winery, all bunches are revised on the selection table by separating and rejecting the leaves and bunches that are not suitable, although all grapes are previously selected since only the bunches that are in perfect conditions of health and ripening are harvested.

We do not participate much in the winemaking process, our role is to check that everything is carried out properly. This is relatively easy due to the good quality of the grapes and the current technology.

When the winemaking process is complete, wines are sent to cellar 2, where the vintage room is located.
